Sweet and sour baked chicken

Ingredients:

– 2 boneless, skinless chicken breasts, cubed

– 1/3 cup cornstarch

– 1/2 teaspoon garlic powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 2 tablespoons olive oil

– 1/2 cup pineapple juice

– 1/2 cup ketchup

– 1/4 cup brown sugar

– 2 tablespoons apple cider vinegar

– 1/4 cup diced onion

– 1/4 cup diced bell bell pepper

– 1/4 cup diced pineapple

Instructions:

1. Preheat oven to 375°F.

2. In a shallow bowl, combine cornstarch, garlic powder, salt and pepper.

3. Place chicken cubes in bowl and toss to coat.

4. Heat olive oil in a large skillet over medium-high heat.

5. Add chicken cubes and cook for 3 to 4 minutes, stirring occasionally, until chicken is lightly browned.

6. In a medium bowl, combine pineapple juice, ketchup, brown sugar and apple cider vinegar.

7. Place chicken cubes in a 9×13-inch baking dish.

8. Pour pineapple juice mixture over chicken.

9. Top with diced onion, bell pepper and pineapple.

10. Bake for 25 to 30 minutes, or until chicken is cooked through.

11. Serve over cooked rice and enjoy!
